"In a town filled with fractious ramen loons, we'd be daft to declare one bowl better than all the rest. So lets just call Ivan Orkin's seminal shio recipe our favorite ramen so far this year. Yes, we base our decision on the perfectly orange-yolked egg, and the ribboned chashu pork, which takes the obsessive Orkin many laborious steps to cook. But the thing we can't get out of our head is the shio stock itself, which, as any ramen geek knows, contains more ingredients than many recipes in Escoffier and is way more fun to eat."
