Grape Republic, "Rosso", 2019, 10.5% ABV, Japan
Japanese Natural Wine is not easy to come by. Grape Republic was founded by restaurateur & sommelier Kazuomi Fujimaki in 2015 who up & moved from Tokyo to the village of Shinden in Yamagata. The goal was to make lively, clear Japanese natural wines in free style using the grapes grown in Yamagata's orchards. A blend of Steuben, Niagara, & Yama Sauvignon left on skins for 12 days.

Christian Tschida, "Kapitel 1", 12.0% ABV, 2020, Austria
The Kapitel I from Christian Tschida is an elegant Cabernet Franc. It has an obvious intense cassis nose, also cherry and fresh hay. The little fizz on the tip of the tongue presents this lively, complex wine. Tiny smoky notes and an amazing stony minerality rounding up in an umami experience. One sip leads to another.

This Syrah comes from 30 year old vines! The fruit is destemmed before crushing by foot. The wine is fermented in large barrels with ambient yeasts, before aging 2 years and bottled unfiltered with no sulphur added.

Domaine Plageoles, "Terroirists", 13% ABV, France
Grapes: Muscadelle (80%); Mauzac, Ondenc, Verdanel, Loin de L’œil & Sauvignon (20%) Vineyard: bush vines on clay-limestone. Estate-owned, certified organic, farmed by the vintners. Making of: the grapes are hand-harvested. The Muscadelle is whole-bunch macerated for 11 days, pressed and aged in demi-muids for 9 months. The remaining varieties are direct-pressed and aged in tanks, with all fermented spotaneously. The 2 parts are blended at the end of elevage. Bottled unfined, unfiltered, w/ a tiny bit of sulfur (20ppm). Personality: charming orange with notes of dried fruit, candied orange peel & turmeric – super cool food-pairing material!

Grapes: blend of white grapes with Gruner Veltliner Vineyard: limestone, quartz, schist Making of: the grapes are hand-picked. The Gruner gets a short maceration, gently pressed and then blended with directly-pressed white field blend. Aged in oak for about a year. Bottled unfined and unfiltered; no sulfur added. Personality: incredibly fresh & pure, w/ laser-sharp acidity.
