Brewed entirely with handmade methods, this off-dry sake is made from Yamada Nishiki using wild yeast. Kioke are unique cedar tanks that allow for the Bodaimoto method, a historical sake brewing technique. Vintage dated, this sake changes every year due to the specific microorganisms present.
